In Avatar: The Last Airbender — The Art of the Animated Series, the creators state that Appa's fur is braided through loops to hold the saddle on his back. These braids appear to be a strand from one side of a little eight-shaped loop, with a synonymous one on the other side. They are then braided together in the center. Many of these loops are repeated throughout the saddle allowing it to be firmly placed on Appa's back.
